| Healthy Spelt Pumpkin Carrot Bread Recipe

| Honey (can also use maple syrup or agave syrup) |

| Milk or Orange Juice |

| Pure Vanilla Extract |
| 1 cup |
| Pumpkin Puree |
| 3/4 cup |
| Carrots, grated and lightly packed |
| 2 cups |
| Spelt Flour, whole grain |
| 1 tsp |
| Baking Powder |
| 1/2 tsp |
| Baking Soda |
| 1/2 tsp |
| Salt |
| 2 tsp |
| Cinnamon |
| 1/2 tsp |
| Nutmeg |
| 1/4 tsp |
| Cloves |

  Directions
- Preheat oven to 350F. Grease a loaf pan.
- Combine whole grain spelt flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a mixing bowl.
- In a large mixing bowl, blend the oil, honey, pumpkin puree and carrots. Add the vanilla and milk or orange juice and mix well.
- Beat the eggs in one at a time.
- Add the dry ingredients to the liquid ingredients. Mix well.
- Pour into the greased loaf pan.

Baking Instructions
350 F for about an hour or until a toothpick put into the center of the bread come out clean.
