| Healthy Broccoli Soup Recipe

  Ingredients
| 1 |
| Onion, chopped |
| 6 cloves |
| Garlic, smashed and minced |
| 1 1/2 cups |
| Brown Rice, (uncooked) Basmati works well if you can find it |
| 2 cartons |
| Chicken Broth, low sodium |
| 4 cups |
| Broccoli, washed and chopped |
| 1 cup |
| Milk |
| 1 tsp |
| Smoked Paprika |
| 1 Tbsp |
| Dry Mustard |
| 1 tsp |
| Oregano |
| 1 tsp |
| Basil |
| to taste |
| Sea Salt and Pepper |
| 1 Tbsp |
| Olive Oil |

  Directions
- Pour oil in a large soup pot and heat over medium heat.
- Add garlic when the pot has heated up. Stir while cooking for one minute.
- Add the chopped onion. Cook for 3 minutes, stirring often.
- Add chicken broth and brown rice. Increase heat and bring to a boil.
- Add broccoli, cover the pot and reduce the heat to medium-low. Cook for 30 minutes.
- Add milk, paprika, dry mustard, oregano and basil.
- Add salt and pepper.
- Serve with a thickly cut piece of fresh whole grain bread. Store leftovers in the refrigerator.
