| Healthy Oatmeal Fudge Bars Recipe

| 1/2 cup |

| Peanut Butter |

| Brown Sugar |

| Whole Grain Flour (whole wheat, kamut or spelt) |
| 1 tsp |
| Baking Powder |
| 1 tsp |
| Salt |
| 2/3 cup |
| Cocoa Powder |
| 1 cup plus 1/4 cup |
| Peanut Chunks |
| 4 cups |
| Oats |
| 1/2 cup |
| Dark chocolate chunks or carob chips |

  Directions
- Preheat oven to 350F.
- Mix the flour, baking powder, salt and cocoa powder in a small mixing bowl and put aside.
- Heat butter and peanut butter in a large microwave safe mixing bowl until they can be mixing together.
- Add the brown sugar, eggs and vanilla.
- Add dry ingredients and beat for a couple minutes with a mixing spoon.
- Mix the oats and 1 cup of the peanut chunks in. Set aside the remaining 1/4 cup peanut chunks.
- Press mixture into a greased 11 by 7 inch baking dish. Sprinkle the chocolate chips on top.

Baking Instructions
Bake for 20 minutes at 350F. Then take the pan out of the open and spread the melted chocolate chips with a knife. Sprinkle the remaining 1/4 peanuts on top and bake for another 5 minutes.
Let the squares cool for an hour prior to cutting. Freeze promptly. Take these squares out of the freezer about 10-15 minutes before serving.
