Whole Wheat Banana Cornmeal Muffins Recipe

Directions
- Preheat oven to 400 F.
- Mash 1 ½ of bananas and set the other half aside.
- Add milk and cornmeal to banana. Let stand 10 minutes.
- In a separate bowl combine flour, brown sugar, baking powder and salt.
- Add oil to cornmeal mixture.
- Add dry ingredients, stirring just until combined.
- Use muffin cups to line the muffin pan. Pour 2/3 full for small muffins or to the top for large muffins.
- Using the other half of the banana, cut thin slices off and place on each muffin.
Baking Instructions
400°F for 16 minutes for small muffins or 17 minutes for large muffins. The single batch makes 12 small muffins or 8 large muffins.
