| Healthy Whole Grain Cornmeal Muffins Recipe |

  Ingredients
| 1 |
| large egg |
| 3/4 cup |
| cornmeal |
| 1 1/4 cup |
| milk |
| 1 cup |
| whole grain flour (I've tried whole wheat, spelt and kamut) |
| 1/3 cup |
| brown sugar or honey |
| 1 Tbsp |
| baking powder |
| 1/2 tsp |
| salt |
| 1/4 cup |
| olive oil |

  Directions
- Preheat oven to 400F and place 12 silicone muffin liners on a baking sheet. Spray each muffin liner with one spray of olive oil.
- Mix milk and cornmeal in a mixing bowl. Let stand 10 minutes.
- In a separate bowl combine flour, brown sugar or honey, baking powder and salt.
- Add oil and egg to cornmeal mixture.
- Add dry ingredients and stir until just combined.
- Fill each muffin liner just over one half full.

Baking Instructions
Bake at 400F for about 16 minutes or until a toothpick inserted into the center comes out clean.
This recipe makes 12 small muffins. For 15 large muffins, double the recipe, fill muffin cups to 2/3 full and bake for 17-20 minutes or until a toothpick inserted into the center comes out clean.
