| Healthy Roasted Beets Recipe

  Ingredients
| 6-10 |
| Beet Roots, medium |
| 1 |
| Shallot, peeled and minced |
| to taste |
| Sea Salt & Pepper |

| Olive Oil, to lightly coat beets |
|
|

  Directions
- Preheat the oven to 425F.
- Wash the beets well, removing any bad spots.
- In a large bowl, toss the beets (with the skins on) in enough olive oil to lightly coat them.
- Pour the beets onto a large piece of aluminum foil.
- Sprinkle the shallots, sea salt and pepper on top of the beets.
- Wrap the beets up really well in the foil. Try to get it as airtight as possible.

Baking Instructions
Roast the beets for 60 - 90 minutes or until a knife can easily be stuck through to the middle of the beet.
I usually just eat the beet skin on roasted beets but you can remove it afterwards if you'd like.
