| Healthy Apricot Chicken Breasts Recipe |

  Ingredients

| Chicken Breasts, boneless and skinless |
| 2 |
| Apricots, each cut into 8 pieces |
| 1 Tbsp |
| Lemon Juice |
| 1 Tbsp |
| Ginger, minced |
| 1 Tbsp |
| Honey |
| 1/4 tsp |
| Thyme |
| 1/4 tsp |
| Rosemary |
| 1 Tbsp |
| Olive Oil |
| to taste |
| Sea Salt and Pepper |

  Directions
- Preheat oven to 375F.
- In a small mixing bowl, whisk together the lemon juice, ginger, honey, thyme and rosemary.
- Slowly whisk in the olive oil.
- Toss the apricots in the sauce to coat them.
- Arrange the chicken breasts in a 9 by 13 inch baking sheet.
- Add the apricots evenly on all the chicken breasts.
- Spoon remaining liquid evenly over all the chicken breasts.

Baking Instructions
Cook the chicken breasts at 375F until a food thermometer reads 165F. Let the chicken breasts rest for 10 minutes before serving.
