Spelt Chocolate Zucchini Cake
Ingredients

| 3/4 tsp | | Baking Soda |
| 1 tsp | | Cinnamon |
| 1/2 tsp | | Nutmeg |
| 1/4 tsp | | Cloves |
| 1/2 tsp | | Salt |
| 4 Tbsp | | Cocoa Powder, unsweetened |
| 1 cup | | Honey |
| 1/2 cup | | Brown Sugar |
| 3/4 cup | | Olive Oil |
| 1/3 cup | | Apple Sauce |
| 1/4 cup | | Milk |
| 4 | | Eggs |
| 3 cups | | Peeled, grated zucchini, lightly packed |
| 1 tsp | | Vanilla |
Directions
- Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, salt, and cocoa in a mixing bowl.
- In a separate bowl, beat honey, brown sugar, applesauce, and vanilla with an electric beater.
- Beat in eggs one at a time. Add olive oil and milk slowly.
- Add the first half of the dry ingredients and beat well.
- Add the rest of the dry ingredients and beat well.
- Add grated zucchini and blend well.
- Pour into a large, greased cake pan.
Baking Instructions
Bake at 325 F for 55-60 minutes or until a toothpick inserted into the middle of the baking pan comes out clean.
