Healthy Spelt Carrot Cake Recipe

  Ingredients
1 3/4 cups Spelt Flour
1 tsp Baking Powder
1 1/2 tsp Baking Soda
2 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Cloves
1 tsp Salt
1 cup Honey
1/2 cup Brown Sugar
3/4 cup Olive Oil
1/4 cup Applesauce
4 Eggs
3 cups Grated Carrots, lightly packed
2 tsp Vanilla Extract
1/2-1 cup Chopped walnuts or pecans
  Directions
  1. Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a mixing bowl.
  2. In a separate bowl, beat honey, brown sugar, applesauce, and vanilla with an electric beater.
  3. Beat in eggs one at a time. Add olive oil slowly.
  4. Add the rest of the dry ingredients and beat well.
  5. Stir in grated carrots and nuts, if using.
  6. Pour into a large, well-greased cake pan.
Baking Instructions

Bake at 350 F for 45 minutes or until a toothpick inserted into the middle of the baking pan comes out clean.
