Spelt Carrot Cake Recipe

Applesauce |

Grated Carrots, lightly packed |

Vanilla Extract |
| 1/2-1 cup |

Chopped walnuts or pecans |
Directions
- Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a mixing bowl.
- In a separate bowl, beat honey, brown sugar, applesauce, and vanilla with an electric beater.
- Beat in eggs one at a time. Add olive oil slowly.
- Add the first half of the dry ingredients and beat well.
- Add the rest of the dry ingredients and beat well.
- Stir in grated carrots and nuts, if using.
- Pour into a large, well-greased cake pan.
Baking Instructions
Bake at 350 F for 45 minutes or until a toothpick inserted into the middle of the baking pan comes out clean.
