| Healthy Orange Chocolate Pudding Recipe | |

| Honey, Maple Syrup or Agave Nectar |

| 1/3 cup |
| Cocoa Powder |

| Soft Tofu |
| 1 tsp |
| Vanilla Extract |

  Directions
- In a small sauce pan, bring the orange juice and most of the orange zest to a slow boil on medium-low heat. Save the rest of the orange zest to use as a garnish later.
- Slowly whisk in the cocoa powder. Remove the saucepan from heat and whisk in the sweetener of your choice (honey, maple syrup or agave nectar).
- Whisk in the butter and put the mixture into the refrigerator to chill.
- In a food processor, whip the soft tofu until it is silky smooth. Add the vanilla extract to the food processor and blend well.
- Empty the contents of the food processor to a mixing bowl. Gently mix the orange chocolate mixture into the tofu.
- Spoon the pudding into dessert cups or wide spouted wine glasses. Top with the reserved orange zest. Cover with saran wrap.
- Refrigerate dessert cups for at least a couple hours before serving. The pudding will thicken up and set nicely during this time.
